I love my Aqara u50 and 2 u300s I don’t currently have a hub but I’m considering adding one. I’m wondering if I just jump on the m3 or if the one in the g410 would be adequate?

I would suggest the M3 also.
Defiantly M3 this has the added bonus of allowing you local control of Aqara devoices through their app when internet goes offline. Its called LAN control
