Switching to zigbee always gets you more features and entities
It’d be interesting to know if matter has all the same capabilities since 1.4 onwards or if its a limitations hence they dont carry across everything available via zigbee

It does, in fact most features are inherited from Zigbee and the way to implement vendor-specific features via custom clusters is essentially the same. In fact Matter has more standard ways to offer custom settings like the Mode Select, even if not many platforms implement that.
Aqara decided to implement their vendor features only in Zigbee but not in Matter. Other brands have more features in Matter compared to Zigbee (e.g. IKEA) or they only support Matter and every feature is offered through Matter (e.g. Eve).
That’s the risk of multi-protocol devices, there’s always one protocol with more features than the others. Matter more often than not is seen as a basic protocol for interoperability and devices (and even platforms!) do not make the most of all their features.
