Was hoping to find some help monitoring when my washer, dryer, and maybe dishwasher are done with alerts in apple HomeKit.

If your dishwasher has the option to automatically open its door once finished washing, then simple window/door magnet sensor could be used.

I use smart plugs for this purpose. As soon as the washing machine, dishwasher, or dryer has finished, energy consumption drops to almost zero. If it falls below 4 watts, it triggers a push notification to my smartphone.

Exactly, a power supply or a T2 relay can measure the power consumption and can send you an info when power drops for a time and gives you notifications
