Any suggestions on how to make a waterproof enclosure for an aqara temperature sensor so that it could be used in a pool? Obviously needs to be waterproof, but still get an accurate water temperature?

Radio waves pretty much don’t pass through water (unless it’s very specific VLF).
You need a split device, with the temperature sensor connected with a cable to the electronic housing.
You won’t manage with Aqara temp sensor.
