Do I need a hub to use the U400 and my Samsung Phone and Galay watch to unlock, and if so, what protocols does the hub need to support, I currently have Zig-Bee. Please NOTHING APPLE

The U400 can work without a hub. But if you want to use a hub (for automations and remote control), then any Thread hub will work (those are usually advertised as Matter hubs, but check it they support Thread as communication protocol).
