What is one good way to connect all statistics of the Aqara Smart Plug US to Home Assistant

when bridging it with matter on the Aqara M100 Hub it does let you turn it on and off in HA, but that’s all, how could I get power usage and more control/statistics in HA.

You’ll need to pair the plug directly to HA via Zigbee (ZHA or Zigbee2MQTT). You will need a 3rd party Zigbee coordinator ex: Sonoff ZBDongle-P, etc.

Just found It after the update, I forgot to look lower (It may provide more controls if I directly connected it but this is enough)
