I have a few questions about Aqara Light Switch H2 EU and found conflicting information online, so I came here to see if someone can help me.
Is it true that you can only activate wireless mode on all buttons (so that the power is never cut from the lights) in Zigbee mode? The website didn’t make it clear. So in Matter over Thread mode, it will always have a dedicated button that cuts power to the light, is that right?

It seems you are right. I found an official comparison chart (oddly enough, it appears to be only available on the German product page right now) that confirms this.
In the Features section of the chart, “Relay Lock” and “Wireless Switch Mode” are listed under the Zigbee Mode column. Under the Thread Mode column, these features are missing.
Yes , can confirm this … Matter unfortunately has mostly less features than zigbee mode with most Aqara devices
