It seems it is impossible to add a user to the lock if I am not at home. I think it would be a great addition if that could be made possible. I often have to get last minute dog-walkers or other people that needs access to the house. However, I don’t always know exactly who in advance. I would like to be able to create a user and passcode, even if I have already left my home. Please let me know if there is a solution to this?

Unfortunately you need to have close to the U200 to change the settings/ add a new user to it 
I also waited for the update to make changes without being connected to the lock by BT - but seems it’s impossible to the engineers to make this happen
Hopefully the successor will get this feature then

Unfortunately the only option in Aqara app to give access remotely is to use “Remote periodic password”.
If you have added the U200 to Apple Home, then if you add guest/resident to your home, they will automatically gain access to your lock. And this can be done remotely (but you need an Apple Home hub like a HomePod).
