According to Apple the Apple TV can be used as a Matter hub however when trying to connect the U300 smart lock to a hub none of my Apple TV’s which are the correct version show as an option to use. What am I missing?

If you are trying to do this in Aqara home then you need an Aqara hub ( m3 , g410, G5 pro , m100 ) and apple tv cannot be linked to the U300 in aqara home.
If you are using apple homekit then you can use apple tv (make sure it supports thread) to connect the U300 in HK.
