Would it be possible to disable the UWB functionality directly on the device via Aqara app? I know right now its not possible and only through Apple Home can you enable/disable the function, however its universal (turns it on / off for all locks you have, not just the one you want to change). It would be good to be able to toggle this on/off through the aqara app on a per device basis.

That would be a really useful feature. Having per-device control in the Aqara app makes a lot more sense than the current all-or-nothing approach in Apple Home. Hopefully something like this can be added in a future update 
I too wish this feature would be added!!
